
Crispy Fried Rice Balls

Use cold cooked rice. Mix it with half the cheese (grated), 1 tablespoon flour, salt, and pepper.

With wet hands, shape into 6 balls, pressing a small cube of the remaining cheese into the centre of each and sealing it in.

Whisk 50 g of the flour with a pinch of salt and about 90 ml ice-cold water into a smooth batter that coats the back of a spoon. Dust the balls in the remaining flour, then dip them in the batter.

Heat the oil in the fryer to 180 C. Never leave hot oil unattended, and keep children and pets away. Fry for 3-4 minutes until golden and the cheese has melted.

Lift out with a slotted spoon, drain on kitchen paper, and season. Let the oil cool completely before storing or disposing of it safely.
Storage & leftovers
Best eaten fresh; fried food loses its crunch after refrigeration.
