    Cut the chicken into 2-3 cm bites and season with salt and pepper. Finely grate the cheese.

    Whisk 60 g of the flour with a pinch of salt and about 90 ml ice-cold water into a smooth batter that coats the back of a spoon.

    Dust the chicken in the remaining flour, then dip it in the batter.

    Heat the oil in the fryer to 170 C. Never leave hot oil unattended. Fry for 4-5 minutes until golden and the chicken reaches 74 C.

    Drain on kitchen paper and toss straight away with the grated cheese so it melts onto the crust. Let the oil cool completely before storing or disposing of it safely.

Best eaten fresh; fried food loses its crunch after refrigeration.
