
Beer-Batter-Style Fried Fish

Use a fully defrosted salmon fillet. Pat it very dry, cut it into 3 strips, and season with salt and pepper.

Whisk 60 g of the flour with a pinch of salt and about 90 ml ice-cold sparkling water (or beer, if you have it) into a smooth batter.

Dust the fish in the remaining flour, then dip it in the batter.

Heat the oil in the fryer to 180 C. Never leave hot oil unattended, and keep children and pets away. Lower the fish in away from you and fry for 4-5 minutes until golden and the fish reaches 63 C.

Lift out with a slotted spoon, drain on kitchen paper, and season. Let the oil cool completely before storing or disposing of it safely.

Best eaten fresh; fried food loses its crunch after refrigeration.
