Heat the oven to 180 C (160 C fan) and line an 18-20 cm square tin. Toast the brioche pieces on a tray for 5 minutes.

Make the brownie batter as in the main method and fold in the brioche and chopped chocolate.

Bake for 22-28 minutes until the edges are set and the centre has a slight wobble.

Cool completely in the tin before cutting.

Try a plain brioche roll or a milk roll or another soft enriched bun.
Storage & leftovers
Keep cooled brownies in an airtight container for up to 2 days, or refrigerate for up to 4 days. Let chilled pieces return to room temperature before serving.
