Add bite-size chicken pieces and cook for 5 minutes, turning.

Add sliced pepper and the coconut milk. Simmer for 10 minutes until the chicken is cooked through and the sauce thickens slightly.

No Chicken?
Try Chickpeas or tofu.
No Curry powder?
Try 1-2 tablespoons Thai red or green curry paste.
Storage & leftovers
Cool leftovers within 1 hour, refrigerate, and eat within 1 day. Reheat only once, until steaming hot all the way through.

Curry paste gives a more authentic flavour than curry powder if you can get it.
